School starts tomorrow. I am now the Mom of a 4th grader and a 1st grader. Nope, I'm not feeling the least bit old or sappy. Oh, who am I trying to fool. I'm going to miss my two little men while they are in school. Both boys usually pack their lunches unless the cafeteria is serving pizza. I remember the square slices of pizza with ranch dressing. It was the best, at least my inner 9 year old thinks so. I try to keep from sending the same ol', same ol' sandwiches, chips and a Little Debbie cake so the boys don't become the kid no one wants to do lunch trades with- Do kids still do that at lunch time? I know one treat that I pack in the lunch bags that never make it back home at the end of the day...
Frushi fruit sushi
You can make frushi with fruit roll ups or homemade fruit leather or the pure organic fruit and veggie fruit strips. You'll also need some tapioca pudding or if you prefer, plain rice along with your fruits of choice or if you want to save a step of slicing fruit you can buy the little fruit cups of mixed fruits to use.
I use which ever type of fruit roll ups or fruit leather that I have on hand at the time that my boys request frushi in their lunches. This week I had some pure organic fruit and veggie strips. The fruit roll ups work just the same, it's all in what you prefer to buy and feed your family. The fruit strips are thicker than roll ups so for roll ups I suggest using 2 roll ups and chilling them (rolled out flat) in the fridge for about 5 minutes before trying to fill and roll. With the fruit strips you can use them as is, no chilling required.
I sliced the fruit strips in half long ways then spooned a bit of tapioca pudding on the strips. Then I layered in some chunks of different fruits that we had. This particular time I had some fruit cups that had cherries and peaches so I drained the juice out of the cup and used a few pieces of those. I also sliced up some cantaloupe and kiwi. I had strawberries and blueberries but my youngest ate those before I got the chance to save me some for the frushi. Also, with the tapioca pudding you could just fill the frushi rolls with just the pudding and then use the fruit slices only on top of the rolls. What ever suits your frushi fancy.
