This is my last recipe for summer dessert week. In addition to my berry cherry pie and the banana pudding cake, which are both great desserts for summer, I wanted to share this no bake berry icebox cake recipe. You don't have to have the oven running and heating up the house in the summer with this cake.

This cake makes a great addition for cookouts and summer get togethers. All you need is golden Oreos or graham crackers, cream cheese, cool whip, and a variety of berries of your choice. It takes about 10 minutes to make but the hard part is the waiting for it to chill in the fridge. It takes a couple hours at least but it's best overnight (in my opinion) giving the cookies or graham crackers time to soften.
No Bake Berry Icebox Cake ingredients
20 golden Oreos
8 oz block of cream cheese
8 oz container of Cool Whip
variety of fresh berries ( I used strawberries & Rainier Fruit blueberries)

In a large bowl, whip the cream cheese with a mixer. Fold in the cool whip gently so it doesn't become runny. In a 8x8 dish put in a layer of the cream cheese cool whip. Add a layer of Oreos (9 cookies). Top the cookies with a layer of berries. Then top with another layer of the cream/whip mix. Repeat the layering. End with a layer of the cool whip mix and top with a design of your freshest berries and some crushed Oreos.
