Crumb cake, is it dessert or breakfast? I say both! Do you know someone with a birthday coming up that likes crumb cake? Then this Birthday Crumb Cake recipe is a must make for them. What better way to start or end a day than a slice of birthday crumb cake? This post and recipe was created for #SummerDessertWeek! Crumb cake and coffee cake are similar but not exactly the same. Both cakes are really similar, especially with the cake layer. What makes them different is the amount of streusel or crumb topping the cake has. Crumb cake has a thicker or chunkier layer of streusel on top as you can see in the photos here.

Ingredients for birthday crumb cake
How can you go wrong when sprinkles are involved? You can make this crumb cake in a loaf pan, a smaller size baking dish, or a bundt pan.
Cake Batter ingredients :
2 C flour
1 ¼ teaspoon baking powder
½ teaspoon baking soda
½ teaspoon kosher salt
½ C unsalted sweet cream butter, softened
¾ C sugar
¼ C light brown sugar
2 large eggs
1 large egg yolk
2 teaspoon pure vanilla extract
½ C sour cream
½ C whole milk
⅓ C rainbow sprinkles
Birthday Cake Crumb Topping :
1 C flour
½ C sugar
¼ C light brown sugar
¼ teaspoon kosher salt
½ C unsalted butter, softened
⅓ C rainbow sprinkles
Optional sugar glaze:
1 cup confectioners' sugar
2-3 tablespoon whole milk
Birthday Crumb Cake Instructions
For the crumb cake: Preheat oven to 350 degrees and spray a 9x5 baking dish with pam baking spray.
Using a large bowl, whisk the flour, baking powder, baking soda, salt and the rainbow sprinkles until combined.
Using a standing mixer, beat together the sugar, butter, brown sugar, eggs, vanilla and sour cream until combined and fluffy.
Alternate between the dry ingredients and the milk and beat until combined.
Pour the batter into the baking dish and set aside while you make the crumb topping.
For the crumb topping:
Using a medium to large bowl, combine the flour, sugar, brown sugar, salt and sprinkles until combined.
Using your fingers or spoon, cut the butter into the dry ingredients to create a crumb mixture.
Sprinkle the crumb topping onto the batter and sprinkle some more rainbow sprinkles on top.
Bake in the preheated oven for 45-60 minutes or until a toothpick inserted into the center of the cake comes out clean.
If you choose to use the sugar glaze you will mix that together until it is smooth and drizzle it across the cake before serving.

- ¾ cup granulated sugar Dixie Crystals
- ¼ cup light brown sugar

- 1 large egg yolk
- 2 teaspoon pure vanilla extract
- ½ cup sour cream
- ½ cup whole milk
- ⅓ cup rainbow sprinkles
- Birthday Cake Crumb Topping:
- 1 cup all purpose flour
- ½ cup granulated sugar Dixie Crystals
- ¼ cup light brown sugar
- ¼ teaspoon salt
- ½ cup unsalted butter softened
- ⅓ cup rainbow sprinkles
- Optional Sugar Glaze:
- 1 cup confectioners powdered sugar Dixie Crystals
- 2-3 tablespoon whole milk
