I just got home two weeks ago from Walt Disney World. The Disney blues have set in. Looking for a way to bring the big cheese home with you after a Disney trip? Try whipping up a batch of these Mickey Funfetti Mini Cheesecakes.
Mickey snacks at home
The cheesecakes may not be Mickey shaped but the funfetti sprinkles used in them are! You can find the Mickey sprinkles on Amazon. Wilton has a line of Mickey sprinkles too but it is a much smaller package size. You can swap the Mickey's for any other sprinkles too to make them whatever theme you need.
Mickey Funfetti Mini Cheesecakes Ingredients
For the crust: 1 1⁄4 C Nilla wafer cookies, crushed
1⁄4 C sugar
1⁄4 C unsalted sweet cream butter, melted
cupcake/muffin pan
White cupcake liners
Cheesecake:
2 - 8 oz cream cheese, softened
1 C Funfetti cake mix
2 tablespoon sour cream
1⁄2 C sugar
2 large eggs
3 C Mickey Mouse sprinkles, divided
Fresh whipped cream
Mickey Funfetti Mini Cheesecakes Recipe
- Preheat oven to 350 degrees and line the cupcake/muffin pan with the white cupcake liners
- Using a food processor or a Ziplock bag and rolling pin, crush up the Nilla cookies until you have a sand like consistency.
- Pour into a bowl and whisk the sugar into the ground Nilla cookies
- Mix in the melted butter until a wet sand like mixture forms, remove 1⁄4 C of crust into another bowl
- Using a tablespoon, spoon about 1 1⁄2 tablespoon of crust into the cupcake liners
- Using a flat bottom cup, press the crust into a thick even layer
- Using a stand mixer with a large bowl (or a hand mixer/whisk), beat the cream cheese, cake mix, sour cream, vanilla extract, and sugar until combined
- Beat eggs into the batter, 1 egg at a time
- Fold in 1 1⁄4 C of the Mickey Mouse sprinkles into the cheesecake batter
- Spoon about 2 1⁄2 - 3 tablespoon of cheesecake batter into the cupcake liners
- Sprinkle some of the crust that was set aside earlier, on top of the batter
- Using 3⁄4 C of sprinkles, sprinkle some on top of the cheesecake batter
- Bake in the oven for about 20 minutes or until the middle has set
- Allow to cool for 30 minutes on the counter before removing the cheesecake from the pan and into the fridge to continue to cool overnight
- Just before serving, top with sime whipped cream or Reddi Whip and more Mickey sprinkles and enjoy!
