When you think spring time sweets do you ever think apples? Many people I know tell me apples are a fall fruit. I say it's an any time you want to eat it fruit. I love frying up some Rainier Fruits apples and making a Easter Brunch Apple Fritter Casserole recipe. You can make it any time of year and call it insert holiday here brunch apple fritter casserole recipe or simply apple fritter casserole recipe. If you limit yourself to apples in only the fall then you are missing out my friend.
Apple Fritter Casserole Recipe
You can make the apple fritter casserole recipe with premade croissant rolls but I usually prefer this made with the cinnamon rolls. I also add apple butter to the fried apples as they are simmering. A little extra flavors added in I think without making it too much. Rainier Fruits sent me a box of honeycrisp and lady alice apples but this can be made with just about any type of apple you prefer. My Nana used to tell me only some types of apples were good for baking (granny smith is her go to for baking with apples).
I had Jersey Boy prep four apples for me (peel, core, and dice) while I started the sauce for the apples. I melted a stick of butter and added a ½ cup of brown sugar, ½ cup of Dixie Crystals sugar, 2 Tbs. Adam's Best vanilla cinnamon sugar and stirred until the sugars were dissolved in with the melted butter. Then the diced apples were added to the pan and tossed in the butter/sugar mix. I also added the apple butter in at the same time as well.
When the apples are softened (after cooking on medium for about 8 minutes), they are ready to go in the casserole dish with the raw dough cut up cinnamon rolls. Mix it all up and put it in the oven- for the baby and me. Sorry I got carried away a little as Kaylee's favorite song right now is pat-a-cake.
Bake the apple fritter casserole in the oven for 30-45 minutes. With the oven in my apartment and using the Anolon 9" stoneware baking dish from their Vesta collection the apple fritter casserole is golden brown on top and baked completely at 35 minutes. For the icing drizzle you can either use the pre-made icing from the cinnamon roll cans or make your own. Some folks don't like the canned stuff and if you make this with croissants instead of the cinnamon rolls you may not have the pre-made stuff on hand already open. To make the icing you mix together cream cheese, butter, vanilla, milk, and gradually mix in confectioners sugar until smooth. Drizzle the icing and serve your apple fritter casserole recipe immediately while it's still warm.
