Time to share what's cooking in Mama B's kitchen this week. Since we have a party to attend this weekend I'll only be cooking 5 days this week.
Breakfasts (all served with fruit and/or yogurt):
Blueberry waffles
Pancakes
Bacon egg and cheese biscuits
Breakfast quesadillas
Cereal
Lunches:
ham and cheese sandwiches
cheese quesadillas
leftover stew
homemade hotpockets
chicken salad sandwiches
Dinners:
Cube steak with sawmill gravy, potatoes and green beans
Crock Pot French Dip sandwiches
Maple Ham (crock pot) w/ hash brown casserole and baked beans
Baked pasta with garlic bread
Chili Lime Chicken (crock pot)*recipe below*
Chili-Lime Chicken (crock pot)
Ingredients:
1 & ½ lbs. boneless chicken breast
3 tablespoon lime juice
1 tablespoon chili powder
1 c. frozen corn
1 c. chunky salsa
1 can diced tomatoes (optional)
Place chicken in crock pot. Combine lime juice and chili powder and pour over chicken. Cover and cook on LOW for 4-6 hours or until chicken is tender. Shred chicken, stir in other ingredients and continue cooking on LOW for 30 minutes. Serve in tacos, over rice or in tostada bowls with your usual taco fixings.
